White Cheddar Greek Pasta Salad


1/2 tomato diced
1/2 ripe avocado diced
1 oz diced red onion
1 oz sliced cucumbers
1 oz olive oil
2 oz mayonnaise
2 oz grated white cheddar
a dash of dried Greek oregano
a pinch of salt and pepper to taste
1 oz diced red pepper
2 oz feta cheese crumbled
1/4 cup black kalamata olives
250 grams dried penne pasta
2 oz white seedless grapes halved


In a four quart pot bring water to a rapid boil add pasta.  Stir.  Cook 8 – 10 minutes until desired doneness, drain in colander, refresh in cold water.  After pasta is well drained, toss in a touch of olive oil. Mix so pasta does not stick.  Toss in all remaining ingredients. Mix well.   Season with salt and pepper to taste.  Chill and serve.


Also goes great with grilled chicken, fish, meat sliced and placed on top of salad.
