Caribbean Island Getaway Salad

Cold weather getting you down?  Escape to the tropics with this island inspired salad!


2 lbs yukon gold potatoes cooked and cubed (skin on optional)

1 ripe medium sized mango diced in 1/2 inch cubes

1/2 green pepper 1/4 inch diced

3 stalks green onions chopped

1 whole jalepeno pepper, seeds removed, finely diced

2 oz sweet coconut grated

8 oz green or red seedless grapes cut in half

pinch of allspice

salt and fresh ground black pepper to taste

3 oz mayo

2 oz sour cream

plantain chips to garnish

a few leaves of torn cilantro

juice of 1 fresh squeezed lime

1 fresh corn on the cob, kernels removed


In a large pot bring to boil salted water.  Add potatoes.  Cook until done, drain and cool.  In large bowl combine cooled potatoes and all remaining ingredients, except cilantro and plantain chips, mix well.  Season to taste. Cover and put in fridge for two hours.  Transfer salad onto desired serving platter, garnish with torn cilantro leaves and plantain chips.  Serve and enjoy!
